Atukula Upma
is the favorite dish of my mom. She really loves to make it on a cold day. Having it hot with a cup of hot tea seems really delicious and satisfying.
Ingredients:
2 cups Poha / Atukulu
1 small size Potato
2 tsp Peanuts
1/2 tsp Urad dal
1/2 tsp Chana dal
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1 tsp Turmeric
4 Green Chillies
5-6 Curry Leaves
3 tsp Oil
Salt to taste

Preparation:
1) Wash the Poha once and remove all of the excess water. Place it aside until whole water is gone.
2) Cut the potato into very small pieces and place it in a bowl of water.
3) Preheat oil in a pan. Now add cumin seeds, mustard seeds, peanuts, chopped chillies, potato pieces, urad dal, chana dal and curry leaves. Fry them for 5 minutes and now add on turmeric.
4) Fry them until the potatoes are cooked but make sure that the ingredients added to the pan aren't over fried.
5) Once the potatoes are cooked, add the poha and salt. Mix well.
6) Leave it on for 5 minutes and serve hot.
Note:
If you wish you can add a pinch of asafoetida or hing to the dish to make it even more tasty. Enjoy a hot cup of tea after having the dish.
